

Sometimes a recipe is carefully planned.
And sometimes two jars of butter chicken sauce fall out of a Costco three-pack and go BOOM on the floor, and suddenly you have a culinary emergency. 😂
My mom was kind enough to pick up some butter chicken sauce at Costco. It came in a three-pack, with all three jars held together by a cardboard carrier.
Unfortunately, the cardboard carrier apparently had one job and decided it was optional.
I picked up the three-pack, two jars fell out, and down they went. Thankfully, neither jar broke—but their seals popped.
Which meant I needed to use them quickly before they went bad.
So… voilà! Butter Chicken Soup.
I tossed in chicken thighs, potatoes, grape and cherry tomatoes, a bag of mixed vegetables, a bag of Brussels sprouts, and both jars of butter chicken sauce. Add some liquid, let everything simmer together, and suddenly my Costco oops turned into a giant pot of dinner.
And you know what?
It looks really tasty.
Sometimes the best recipes aren’t planned. Sometimes they’re just the delicious consequences of a cardboard carrier failing spectacularly.
